Raita can be made from many different ingredients including: Cumin, Mustard Seeds, Cucumber, Ginger, Hot Pepper Paste, Pineapple, Onion, Carrot, Papaya, Mint and Cilantro.
The list is as varied as the many regions in which it originates.
2 Cups Plain Yogurt
Juice of 1/2 a Lemon
1 Bunch of Cilantro, chopped
1 thumb-sized piece of Ginger, minced
1 Garlic Clove, Minced
Salt & Pepper
Blend all ingredients and allow to sit (refrigerated) several hours or overnight.
Raita goes well with most curries and can really soothe the heat in spicy dishes.
