Newfie Boil (Jigg’s Dinner)


This is an old traditional recipe and you will never believe how good it is!

Start by making the salt beef.  You can buy it but I find it way over-priced…

  • about 1 1/2 – 2 lbs beef(a tough, fatty cut is best)
  • 1/2 cup coarse salt
  • 4 bay leaves
  • 4 garlic cloves (whole)
  • 1 medium onion
  • sprig Rosemary

Dice the beef into large cubes.

Bring to a boil the salt, bay leaves, garlic and rosemary in enough water to just cover the beef cubes.

Cool slightly and add the beef cubes.  Store in the refrigerator for 5-10 days.
(I used a piece of brisket but added a couple cubes of pork because my brisket wasn’t fatty enough).
Rinse the beef cubes, several times to remove as much of the salt as you can. Discard the marinate and it’s vegetables/seasonings.
  • 2 large potatoes
  • 1/2 medium turnip
  • 2 carrots
  • 1/2 small head of cabbage


Add rinsed beef to enough water to cover and simmer 2 1/2 hours. (at this point test the water for saltiness and if it’s too salty, pour it off and add fresh water.) Add the cabbage and turnip and simmer 2 more hours. (make sure the meat is tender).
Add the carrots and potatoes and simmer until done .
Remove the meat and vegetables to a plate. Season and thicken the juices and serve over the meat and vegetables.
