1 Kg Fresh Tomatoes

1 Large Onion

1 Rib of Celery

2 Garlic Cloves

1 Bay Leaf

3 Cloves

1- 2″ Cinnamon Stick

about 15 Black Pepper Corns

 

Wash Tomatoes and remove stems. I also removed the core from some of the larger ones.

DSCF7464This pot seemed a little small but once it cooked down it was fine…

Sauté diced onion with garlic and celery until tender them add remaining ingredients and simmer over medium-low heat for about 90 minutes-2 hours.

The mixture will be quite thick.

Cool, then add:

 

1/4 Cup Cider Vinegar

Juice of 1 Lemon

1 Tab. Worcestershire Sauce

 

Puree the mixture then force through a fine sieve.

I poured mine into old, clean Grolsch bottles.
