Green Tomato-Mustard Relish


I sure had lots of green cherry tomatoes this fall so I decided to make up a relish recipe.

Once again, this recipe is very influenced by my time in Eastern Canada where relish is an important part of most meals and why not? the nutritional value is significant in these little gems!

(after picking over, washing and stemming my tomatoes I ended up with about 8 cups, loosely packed.)

  • 8 Cups Green Tomatoes
  • 2 Tart Green Apples
  • 2 Sweet Onions
  • 1 Orange Pepper
  • 1 Elephant Garlic Clove
  • 1/4 Cup Pickling Salt

Grind and allow to drain, overnight, in a cheese-cloth lined colander…Discard the juice.

…the juice would be awesome to drink if you were on some kinda funky diet. Full of nutrition! (although a bit sodium-dense). However it’s not necessary for this recipe.

The Next Day….

In a large pot combine:


  • 3 cups of vinegar
  • 1&1/2 Cups Brown Sugar
  • 2 Tab Mustard Powder
  • 1/2 tea Ground Ginger
  • 3 Cloves
  • 1-4″ Cinnamon Stick
  • 1 tea. Celery Seed
  • 1 Tab Coriander Seed
  • 2 Tab Salt


  • Add the prepared tomato mixture


~and simmer for 45 minutes to 1 hour….


Spoon into sterilised jars and process for 10 minutes.
